Anatase titanium dioxide is used in a variety of products where a pure white color and opacity are desired:

  • Confectionery: Candies, chewing gum, white chocolates, sugar coatings, and decorations.
  • Bakery and Pastry Products: Icings, cream fillings, decorations, and bread (to whiten the crumb).
  • Dairy Products: Dairy substitutes, dairy desserts (such as custards and puddings), and ice cream (to provide a creamier and whiter appearance).
  • Sauces and Dressings: Certain white or creamy sauces.
  • Food Supplements and Pharmaceutical Products: Tablet and capsule coatings to provide color and protect ingredients from light.
  • White Chocolates: To intensify whiteness and opacity.

Anatase titanium dioxide (E171) is an inorganic white pigment and one of the two main crystalline forms of titanium dioxide (the other being rutile). It is used in the food industry primarily as a white colorant and opacifying agent, imparting whiteness, brightness, and color uniformity to a wide range of products. Some of its most important properties include:

  • High Opacity: Due to its high refractive index, titanium dioxide is extremely efficient at scattering light, giving it superior opacity and whitening power.
  • Whiteness and Brightness: It provides a very pure white color and high brightness.
  • Stability: It is chemically inert—neither degrading nor reacting with other food components—insoluble in water and most organic solvents, and stable across a wide range of pH and temperature conditions, making it suitable for various food industry processes.
