Disodium EDTA (E385) is used in a variety of food products where the presence of metal ions could compromise stability or visual appeal:

  • Beverages: Soft drinks, fruit drinks, and sports drinks, to prevent discoloration and off-flavors (rancidity).
  • Seafood Products: Canned items such as tuna, crab, and shrimp, to prevent the formation of struvite crystals (magnesium ammonium phosphate crystals) and to maintain color.
  • Dressings and Sauces: Mayonnaise and salad dressings, where it prevents oxidative rancidity of oils and discoloration.
  • Canned/Frozen Fruits and Vegetables: To maintain color and texture, and to prevent enzymatic browning.
  • Margarines and Fat-based Products: To prevent oxidative rancidity.


Disodium EDTA (EDTA 2Na) is an odorless crystalline powder with antioxidant and preservative properties; it acts as a metal-chelating agent to preserve the color, flavor, and texture of food products.
